Hi all coconut affectionados, I love them too, but recently I found out that some are dipped in formaldehyde to bleach them white. When you cut them open they will have a blue tinge from the formaldehyde. Be careful where you get them and if they are not organic, they may be dipped.
It is my understanding that conventional young coconuts are dipped in formaldehyde as a perservative and doing so does not change the physical appearance of the coconut in anyway. Without dipping the coconuts in formaldehyde, they would need to be refridgerated and still require expedited shipping to arrive without spoliation. The formaldehyde allows them to shipped at room temperature on a boat that may travel for weeks before reaching their final destination. Formaldehyde does the same thing to a young coconut that it did to those samples you used to see in biology lab, except you get to eat these.

Add a touch of tropical flare to your menu with this easy-open brown coconut! These coconuts are typically harvested around 12 months, when they are fully mature. Before they're shipped, these coconut have their tough outer husk expertly pared away leaving just the dark brown shell behind. The shell is expertly scored, making these coconuts easy to open! Open the coconut to reveal a small amount of coconut water loaded with oils and a thick layer of crisp, firm coconut meat with a full-bodied flavor. Best of all, these easy-open coconuts don't just look and taste great, but they're great for you, too! Coconut water is rich in potassium and natural electrolytes, making it a fabulous rehydration choice, while coconut meat is high in fiber and contains essential nutrients like iron, copper, zinc, potassium, and vitamins C and E. This bulk supply of 24 easy-open coconuts will keep your kitchen well stocked with this delicious and wholesome ingredient! Even though these coconuts are scored for easy opening, cracking into them takes a bit of practice, but once you get the hang of it, it's well worth the effort. Begin by locating the three round divots, sometimes known as "eyes" on the shell. Test each one with a sharp knife or a Phillips head screwdriver to see which eye is the softest. Puncture the eye with the most give, then upend the coconut over a glass, measuring cup, or bowl and allow the coconut water to drain. Once the liquid has drained, hold the shell steady in one hand and use your other hand to gently whack around the scored circumference of the shell using the backside of a cleaver or chef's knife. The shell should crack cleanly - once it does, you can pull it apart to reveal the meat! Wedge a butter knife between the meat and the shell to remove the meat, then use a vegetable peeler to remove any shell fibers that are left behind on the meat. Use the coconut water to create refreshing tropical beverages, and chop or shred the meat to include in stir frys or sweet desserts. You can also toast the coconut meat to maximize its nutty flavor!
